I love this chicken recipe, again it's easy and really good! 4 servings
Arrange chicken in single layer glass casserole or pie plate. Season with salt and pepper. Whisk oil, lime juice, tarragon and oregano in small bowl to blend. Pour marinade over chicken and turn to coat. Let stand at room temperature for 20 minutes. Pre-heat broiler or barbeque (medium-high heat). Transfer chicken to broiler pan or barbeque. Season with salt and pepper. Broil until just cooked through, about 3 minutes per side. I serve this with orzo mixed with garlic and fresh mint and a vegetable. |
