Recipes - BBQ'd Fennel Spiced NY Steak.

If you're into steak, this recipe is awesome! It's from the Beaulieu Vineyard Wine Society, which I highly recommend joining.

  • 4 6oz. NY strip steaks
  • 2 red vine-ripe tomatoes (unrefrigerated)
  • 2 yellow vine-ripe tomatoes (if you can get them)
  • 4 oz. olive oil
  • Fennel spice mix (see below)
  • Quality balsamic vinegar

Fennel Spice Mix:

  • 4 Tbsp. coriander
  • 1 Tbsp. white pepper
  • 1 cup fennel seed
  • 1 cup kosher salt

Yields approx. 2 cups

Toast and grind coriander, peppercorns and fennel seed to a fine powder (a coffee grinder or blender works great) Mix salt into mixture. Season steaks generously with fennel spice mix. Rub with a little olive oil and grill to your liking over hot coals.

Cut the tomatoes 1/2 to 3/4 inches thick and season with salt and pepper. Drizzle with a little balsamic vinegar and olive oil. Trim the fat off the steaks and slice each four times on the bias. Place the grilled NY steacks on top of the tomato slices. Drizzle with a little more balsamic vinegar and olive oil. I serve this with roasted potatoes, mixed green salad and a full-bodied cabernet.
